2 tablespoons olive oil
3 boneless, skinless chicken breasts
1 teaspoon of salt
½ teaspoon of pepper
1 cup uncooked basmati rice OR long grain rice
2 ½ cups chicken broth
1 bag (12 oz) frozen steamed broccoli
2 cups grated cheddar cheese
In a large skillet (make sure it has a lid) over medium-high heat, add the olive oil, chicken, salt and pepper.
Cook, stirring frequently, 4 to 6 minutes, until the chicken is almost not pink in the middle. The chicken should be white on the outside.
